INGREDIENTS

1 roast pork loin

2 apples from the orchard cut into small cubes

4 Finely chopped garlic cloves

1 cup birch or maple syrup

2 tablespoons of Meaux mustard

1/4 cup freshly chopped Japanese Coriander or regular Coriander

2 envelopes of Fine Cuisine half-ice sauce

3 cups of salt water flower and freshly ground pepper to taste

 

PREPARATION

STEP 1 Preheat oven to 375 ° F.

STEP 2 Place apples, garlic, coriander, 1/2 cup of birch or maple syrup and 1 tsp. of Meaux mustard in a bowl, then mix well.

STEP 3 Take the pork loin roast and using a good knife, make an incision (about 5 to 10 centimeters) in the center of the roast so that the mixture can be inserted.

STEP 4 Place the apple, garlic, coriander and syrup mixture in the center of the roast.

STEP 5 Grill the roast in a roasting pan over high heat on the stove.

STEP 6 Mix 3 cups of water and 2 envelopes of half-ice, then put in the roasting pan.

STEP 7 Spread 1 Tbsp. of Meaux mustard on the roast and sprinkle with half a cup of birch or maple syrup.

STEP 8 Salt and pepper to taste.

STEP 9 Put in the oven for about 1 hour or according to cooking preference. Pork is excellent when pinkish.

NOTE: Birch syrup is a find. It is excellent in the kitchen because it has a slightly more pronounced taste than maple syrup.
