Birch syrup is a syrup obtained from the sap of the birch in the same way as maple syrup. The birch sap contains less sugar than maple, the evaporation is longer and the economic yield is lower. Birch syrup is as sweet as maple syrup but with a totally different taste. One could compare its taste to a combination of honey, licorice, molasses, caramel with a balsamic touch. It can be used in a variety of recipes from intake to desert, in marinades, salad dressings or simply to enhance a particular taste. It is also used for its medicinal properties. For hundreds of years people have used it for problems of rheumatism, arthritis and urinary tract infections.
